Tom Douglas is an American executive chef, restaurateur, author, and radio talk show host. He is known for winning the 1994 James Beard Award for Best Northwest Chef. On May 7, 2012, he won the James Beard Award as Best Restaurateur.
From the smell of the wood burning grill, to the swirl of a silky Yakima Valley Cabernet in the glass, to the first bite of a gingery, pan-browned shrimp-scallion potsticker, Dahlia Lounge is the quintessential Seattle restaurant experience, and for 20 years has been the epicenter of Seattle's local, sustainable, and organic food movement.
Etta's looks out on the bustle of the Pike Place Market. This proximity inspires a seasonal, market driven seafood menu anchored by Tom's fresh Dungeness crab cakes and tuna sashimi salad with green onion pancakes. Beyond that, locals and tourists agree that Etta's defines the classic "Market Brunch".
Cuoco is in Seattle's South Lake Union neighborhood, on Terry Avenue between Thomas and Harrison streets.
"Cuoco" is the Italian word for "cook", and the inspiration for showing off our chefs in an open kitchen. The pasta work station is framed in crisp white tile and surrounded by warm gold and red walls. In addition to the featured fresh pastas, there are savory vegetables and other hearty entrees, created by our newest chef, Stuart Lane.
