Join Winemaker Eric Hays and his wife and co-owner Emily Hays for a 5-course Farm-To-Fork Winemaker Dinner for Ten hosted in their Barrel Room at their vineyards and wine production facility in Shingle Springs.  Skilled presenters of winemaking dinners (most recently at Taste Restaurant in Plymouth) and food-and-wine pairing aficianados, your hosts will delight you with beautiful and creative pairings hand-made with organic produce from their farm and paired perfectly with their hand-crafted wines.  Go one step beyond even Farm TO Fork, to the Hays' Organic Farm and Vineyard itself and enjoy their homegrown organic vegetables and fruits as part of your farm-to-fork experience.  Your custom menu will include pairings with their 2012 Chloe Chardonnay, 2012 Dolores Pinot Noir, 2011 Marguerite Rhone Varietal Blend, 2011 Reserve Cabernet Sauvignon and a Top-Secret Barrel Sample.

Chateau Davell Boutique Winery is one of El Dorado County's finest.  The Hays Family has been hand-crafting extremely small-lot, old world wines with organically grown grapes for about seven years at their winery facility in Shingle Springs and also operates a Tasting Room in Camino which is Open Daily to the public.  Their highly sought-after wines include a nice range of French Varietals and Blends including their flagship Estate Red Blend, Charlotte's Cuvee, named for their 6-year old daughter, and their award-winning Pinot Noir, named for Great Grandmother Dolores.  Owner/Winemaker Eric Hays is also an accomplished artist and has personally created all of the Chateau Davell wine labels with oil paintings of the Family.

Chateau Davell's picturesque organic vineyards are situated at a 1200 foot elevation, above French Creek in Shingle Springs.  The property, which is also home to 3 generations of the family features 3 1/2 acres of organic vineyards, a small farm and orchard, and a newly renovated barrel room and production facility available for private events and winemaker dinners. Aside from wine grapes, a variety of organic vegatables are farmed year round, as well as fruit, nut, and citrus trees.  Produce, free-range eggs and a beautiful selection of artisan chocolates and cheeses are available at the Chateau Davell Tasting Room, as well as their line-up of wines, and some limited production and library wines.
