Item Description
Join FTCNS parent Carl Coates on Saturday, June 11th from 9:30 am to 1:30 pm to learn the basics of brisket purchase, prep, and smoking. Carl comes by way of it naturally, growing up in the wind-blown plains of West Texas (or, actually, suburban Dallas). He owns two smokers and keeps friends' and families’ freezers stocked with smoked meats.
Class includes:
- Trip to the Holzkopf Meat Market to purchase a “packer” (aka brisket) and learn about select, choice, and prime grades.
- Learning the anatomy of the cut: flat, point, collagen, fat cap, etc.
- Rubbing your meat. (Ahem.)
- Smoking basics--from start to stall to finish
- Trusting time and temperature
- Finishing: F.T.C.
Lunch will be served:
- Brisket, slaw and beans
- Dessert
- Beverages (adult if interested)
Class attendees will go home with a tin of Carl's brisket rub and leftover brisket to share (or not) with family.
