Item Description
Compass Vineyards is a boutique producer of 100% estate-grown Cabernet Sauvignon (clone 337) wine. Our vineyard is located at the intersection of Napa's Oakville and Mt Veeder AVAs at an altitude of 1000'. Our terroir yields fruit that has a lovely blend of valley intensity and mountain finesse, further enhanced by this year’s warm summer.
We pick our grapes at a time when they are fully ripe, but not starting to lose moisture, resulting in sugar levels around 24 to 26 brix. During crush we are careful to remove any unripe or raisiny berries in order to extract only the pure essence of our terroir. In 2014 we did a cold soak prior to fermentation, and once fermentation was complete, we did a one week extended maceration. We then aged the wine for 18 months in new French Oak. The result is a well-balanced wine with 13.5% alcohol, a pH of 3.6, and deep rich color. While drinkable now (we recommend 30 minutes of decanting), the wine will age and mature in the bottle for many years.
